We hear frequently that many people choose to grind their roasts into hamburger meat because they just don't know how to cook them. There is no need to be intimidated by a roast, and there is so much goodness to be enjoyed! The following roast recipe is a favorite in the Eck Household and is perfect for roast beef sandwiches, burritos, quesadillas, Shepard's Pie, beef and noodles, etc. Give it a try and we think you'll come to understand why this quick and easy roast recipe is so popular with our family.
Step 1: Liberally cover both sides of roast with salt, pepper, and your favorite seasonings.
Step 2: Sear roast in a pan with olive oil until browned on all sides, approximately 2-3 minutes per side. This adds a nice bark to your roast and really imparts a rich flavor into the meat.
Step 3: Place roast in crockpot. Add one medium sweet onion, sliced into wedges, and 1 tablespoon of minced garlic.
Step 4: Mix together
· 1 – 1 1/2 cups boiling water
· 1 T Better Than Bouillon’s Roasted Beef Base
· ¼ cup soy sauce
· ¼ cup Worcestershire sauce
· ¼ cup Hoisin Sauce
Step 5: Cook on low for 6-8 hours
Step 6: Remove meat from crockpot, trim fat, and shred. Reserve your cooking liquid.
Step 7: Make sauce
· Combine 1 T corn starch into 1 T cold water
· Mix into 1 cup of reserved cooking liquid (For thicker sauce, use 2 T corn starch)
· Add any desired additional seasoning
Step 8: Return shredded meat and sauce to crockpot. Let sauce thicken (use low or warm setting) for 30-45 minutes.
Step 9: Eat and enjoy!
