Chili Season

Fall is such a delicious time of the year! One of the most delicious reasons why we say that...Chili Season! On "chilly" Fall, and even Winter, evenings, it's great to warm up with a bowl of tasty chili. Or maybe a delightful chili-topped baked potato. Yummy! Here's one of my family's favorite chili recipes. I'll often double the recipe and freeze some for later! (The picture below is actually a batch I cooked up early in the season and thawed the other day to heat and enjoy.) This chili is super easy to make and warms up great! Be sure to stock up on some delicious Eck Agriculture ground beef to make your favorite chili (or other) recipes throughout the Fall and Winter.

Southwest Chili - great for Fall or anytime!

Southwest Chili

Ingredients:

1 lb. ground beef

1/2 cup chopped onion (or dried equivalent)

1 pkg. taco seasoning

1/4 t. cumin

1/4 t. onion powder

1/4 t. chili powder

1 can Rotel tomatoes & chilis

1 can black beans (rinsed and drained)

1 can red or white beans

1/2 pkg. frozen corn

Toppings of choice


Directions:

  • Brown hamburger with onion and drain.

  • Meanwhile, in crock pot, pour Rotel, half a can of water, and taco seasoning. Mix well.

  • Add cooked hamburger.

  • Add beans, corn, and spices.

  • If desired, add additional water to create preferred soup consistency. (I do not personally add any more water to mine.)

  • Cook on low for 4 hours, stirring occasionally if possible.


Suggested toppings: shredded cheese, sour cream, tortilla chips, onion, lettuce, tomato, etc.
