The picanha (pee-kahn-yah) steak is a popular cut in Brazilian restaurants and is popular for its tremendous flavor. Often triangular in shape, it is taken off the top of the rump and is therefore sometimes referred to as the rump cover or cap, sirloin cap, or culotte steak. Because it comes from a muscle that is not overused, this cut is tender and juicy, producing amazing flavour when cooked.
