This budget-friendly cut of meat comes from the upper shoulder of the animal, or the area butchers refer to as the chuck. This area is known for its flavorful roasts, but also includes a few inches of the tender muscle where the ribeye comes from. The ribeye comes from ribs 6-12, and the chuck eye from the 5th rib. This proximity means the chuck eye steak shares many of the characteristics of a rib-eye and is a delightful cut to enjoy when you can get your hands on them.
